Chinese cornmeal mantou (玉米面馒头) are probably the easiest steamed buns to make at home. Unlike traditional steamed buns, which often require lots of kneading, proofing, and wrapping, this dough is wonderfully forgiving. It comes together in minutes, only needs one rise, and is so simple that it guarantees success, even if you are new to the kitchen.
Ingredients
200g fine cornmeal
300g all-purpose flour
- 1 tsp of baking powder
- 170g water
- 2 eggs
1.5 tsp of yeast
- 5 tbsp of sugar
- 3 tbsp of melted butter
Directions
Thoroughly mix 300g of all purpose flour and 200g of fine cornmeal in a large mixing bowl. Do not use coarse cornmeal or else your steamed buns will come out really rough.
In a measuring cup, combine all of the following ingredients: 170g of water, 1.5 tsp of yeast, 5 tbsp of sugar, and crack in 2 eggs. Whisk well.
Pour the wet ingredients into the dry ingredients and stir at the same time to incorporate everything.
Once the dough starts coming together, add 3 tbsp of melted butter, switch to your hands and knead until for 5 minutes or until a smooth dough forms.
Shape the dough into a long log and cut it into 12 even pieces.
If you're in a rush, feel free to steam the dough cuts as they are, and you'll get that classic knife-cut mantou shape(刀切馒头). If you want to make round steamed buns, simply shape each piece of dough into a smooth ball.
Place each bun onto a small parchment paper to prevent sticking, then arrange them into the steamer, leaving a little space between each one, and let them raise for 1.5-2 hours.
Fill a pot with water and place the steamers on it. Turn the heat to high. As soon as the water comes to a boil and you see steam escaping from the lid, reduce the heat to medium-low and continue steaming for 15 minutes.
Turn off the heat, but don't open the lid right away. Let the buns rest inside the steamer for another 5 minutes before serving.
