Directions

1. Fill a pot with water and add some frozen Chinese meatballs. Your local Asian market may have a lot of varieties, but any of the following options will be good: fish, squid, shrimp, beef, or pork meatballs.

   
2. Turn the heat to high and cook the meatballs as the water boils.
3. Meanwhile, wash and cut 2 baby bok choy into bite size pieces. You can also use spinach, lettuce, and cabbage.
4. Once the water is boiling, add egg noodles and cook for 3 minutes or follow the instructions on the package. You can use your favorite kind of noodles.
   
5. Meanwhile, add 1.5 tbsp of BBQ spice, 1 tbsp of minced garlic, and 1.5 tbsp of diced scallion into a heat-proof bowl.
6. Heat 2 tbsp of oil to smoking hot, pour it onto the aromatics and mix well.
   
7. Take the noodles out of the water, add the baby bok choy to the pot, and let them cook for 20 seconds.
8. Mix the noodles with the sauce. Top with the bok choy and meatballs.
