Northern Chinese Sweet and Sour Pork (锅包肉) is different than the Cantonese Sweet and Sour Pork. The coating is much thinner, the color is lighter, and there is much less sauce, so the pork can stay crispy.

  • That picture of the pork frying in the wok certainly doesn’t look like that’s 1.5 cups of oil. Quarts maybe. But not cups. I own your wok and have put that amount of oil in it and the meat does not look like that pictured. 1.5 cups is too shallow to have that amount of pork in it
