Easy Chinese Sprite Braised Ribs (雪碧排骨)

Recently in China, there’s been a popular trend of using various soft drinks into Chinese cooking -  like Coca-Cola chicken wings and Coke-braised eggs. Today, I am making Sprite-braised spare ribs. The lemon note and sweetness of Sprite give the ribs a perfectly balanced flavor, and the citric acidity also makes the meat extra tender and juicy. You gonna love it.

Ingredients

  • 680g / 1.5 pounds short pork ribs, about 1.5 inch long pieces
  • 2 Tbsps sugar
  • 4 cloves garlic, peeled
  • 4 slices ginger, sliced thinly
  • 4 scallions
  • 1 cinnamon stick
  • 1 star anise
  • 3 Tbsps soy sauce
  • 1.5 Tbsps of oyster sauce
  • 2 can of sprite (330ml *2)
  • 3 slices of lemon, optional
  • 2 Tbsps diced scallions for garnish
  • 2 tsp toasted sesame seeds for garnish

Directions

  1. Add the pork ribs to a stock pot and fill it with water. Bring it to a boil then fish out the impurities. Remove the ribs to the side.
  2. Add sugar to a clean pot and stir over low heat for 3-4 minutes or until it turns into a deep amber color.
  3. Add the blanched ribs, ginger, garlic, scallions, cinnamon, star anise, soy sauce, and oyster sauce and stir well.
  4. Pour in the Sprite and add a few slices of lemon just to double down on the citrus vibe. Cover and simmer on low heat for about 1 hour or until the ribs are perfectly tender.
  5. Crank up the heat and reduce the sauce until every piece of rib is coated in a thick, glossy, and savory sauce.
  6. Garnish with scallions and toasted sesame seeds, and serve with white rice.
