The Easiest Zucchini Recipe (Ready in 10 Minutes)

Mandy Fu
This is probably the easiest Chinese zucchini recipe. It’s made with just a few ingredients in minutes, but it is incredibly delicious and popular all over China.  In Beijing, this dish is known as Hu Ta Zi糊塌子, some parts of Shandong call it Gua Cai Bing Zi瓜菜饼子. In Henan and Hebei province , you will hear it as 咸食.

Some northern regions call it 摊面片, while most places in the south call it 西葫芦鸡蛋饼, which literally means zucchini egg pancakes. That ‘s something you will see a lot in Chinese home cooking. The same dish can have many different names depending on where you are from.
The Easiest Zucchini Recipe (Ready in 5 Minutes)

Ingredients

    For the zucchini crepe

    • 454g / 1 lb of zucchini, shredded
    • 1 tsp of salt
    • 3 chicken eggs
    • 1 cup of all purpose flour
    • 1/4 cup of diced scallions
    • Oil to pan fry

    For the dipping sauce

    • 1 tbsp of diced scallion
    • 1/2 tbsp of garlic paste
    • 1 tbsp of chopped Thai bird eye chilies
    • 3 tbsp of soy sauce
    • 1.5 tbsp of water

    Directions

    1. Use a Mandolin slicer to shred the zucchini then add 1 tsp of salt and mix for a few minutes to draw out the moisture.
    2. Crack in 3 eggs, add 1/4 cup of diced scallions, and 1 cup of all-purpose flour. Mix well. This dish usually don’t have strict measurements. We are looking for a pancake like texture. If the batter is thick, add another egg or a splash of water. If the mixture feels thin, add more flour.
    3. Pre-heat your pan and spray some oil to cover the entire bottom. Add about ¼ cup of the zucchini mixture to make pancakes and pan-fry over medium-low heat for 2-3 minutes each side until slightly golden.
    4. Usually we don’t eat with dipping sauce but if you want one, here is a classic: 1 tbsp of diced scallion, 1/2 tbsp of garlic paste, 1 tbsp of chopped Thai bird eye chilies, 3 tbsp of soy sauce, and 1.5 tbsp water. Mix well.
    5. Serve the zucchini crepe with the dipping sauce.
