Stir Fry Garlic Green Beans with Lao Gan Ma 老干妈炒豆角

Lao Gan Ma is such a versatile ingredient as it makes boring vegetables enjoyable. Therefore, I am going to show you how to incorporate it into green bean stir fry. Once you've tried it, not only you gonna love it, but also you gonna want to swap in other veggies. It is that delicious.

Ingredients
- 1.5 tbsp of vegetable oil
- 400g / 14 oz of green beans or yard beans
- 1/4 tsp of salt
- 2 tbsp of minced garlic
- 2 tbsps Lao Gan Ma Spicy Chili Crisp
Directions
Snap the tip of the green beans, then pull to remove the fiber. This step is time-consuming, but if you don't do it, your green beans will end up chewy and stringy.
- Turn the heat to low, add 1.5 Tbsp of oil, green beans, and 1/4 tsp of salt. Saute them patiently over low heat for 8-10 minutes or until the green beans are soft and slightly roasted. You must give them enough time to cook through; otherwise, the green beans will taste like freshly mowed grass. You can put on the lid every once every 30 seconds to help cook everything through.
- Push the green beans to the side of the wok so you have room to add 1 tsp of vegetable oil and 2 Tbsp of finely minced garlic. Stir until fragrant, then mix until the garlic bits cling to the green beans.
- Before serving, top with 2 Tbsp of Lao Gan Ma chili crisp and enjoy! Not: Every time you use Lao Gan Ma, stir it well because it is an oil-based sauce. All the salt crystals won't dissolve and will sink to the bottom.
