This sugar orange peel tastes like soft candy, so delicious. This recipe works with all kinds of citrus peel, such as lemon, lime, tangerine, grapefruit, and pomelo. This is my fondest snack from my Childhood. We weren't rich, so we couldn't afford any snacks, but my mom would surprise us with all these creative treats.

Ingredients
- 400g of sugar
- 300g of orange peel, about six large oranges
- 1/2 cup of fresh orange juice from 1 large orange
-
1/2 tsp of vanilla extract, optional
- enough sugar to coat the orange peel
Directions
- Freshly juice one orange, and you should get about 1/2 cup of juice. Depending on the type of citrus fruit you use, you can change to a different citrus juice. However, if you are using lime or lemon, which are extra sour, you only need 3 tbsp instead of 1/2 cup.
- Cut the orange peel into small pieces. Use a utility knife to remove the white layer from the orange peel. Don’t remove it completely. Leave a little bit of pith for better texture.
- Boil the orange peel for 10 minutes, then change the water and soak overnight to remove the bitter taste.
- Drain and transfer the peel into a pan. Add sugar, orange juice, and, optionally, vanilla.
- Stir and simmer over medium-low heat until the syrup thickens (about 25 minutes).
- Let it dry on a rack (about 1 hour) and coat with more sugar to prevent sticking. It can stay good in a sealed jar at room temperature for three weeks.
