If you're looking for a quick, healthy dinner that doesn't sacrifice flavor, this garlic shrimp and broccoli stir fry is one of my favorite recipes. It's packed with lean protein and plenty of vegetables but it is so delicious that you forget you're eating healthy. Whenever people ask me how I stay so skinny, I always joke that this recipe has something to do with it.
Ingredients
To Season the Shrimp
- 14 oz (400 grams) of Shrimp
- 1/4 tsp of salt
-
1 tsp of paprika
-
1/3 tsp of freshly ground black pepper
- 2 tsp of vegetable oil
To Make the Stir-fry Sauce
- 1/2 cup of water
- 1/2 tsp of sugar
-
1.5 tbsp of soy sauce
-
1 tbsp of oyster sauce
-
1 tsp of dark soy sauce
- 2 tsp of cornstarch
To Complete the Stir Fry
- 2-3 tbsp of vegetable oil to stir fry
- 12 oz (340 grams) of broccoli
- 8 cloves of garlic, diced
- 1/2 tbsp of minced ginger
- A few red dried chilies
Directions
In a bowl, combine the shrimp with the salt, paprika, black pepper, and vegetable oil. Toss until evenly coated and set aside while you prepare the remaining ingredients.
In a separate bowl, whisk together the water, sugar, light soy sauce, oyster sauce, dark soy sauce, and cornstarch until the cornstarch is completely dissolved.
Heat a wok over high heat until smoking. Add 2 to 3 tablespoons of vegetable oil, then add the shrimp in a single layer. Stir-fry for 1 to 2 minutes, or until they just turn pink. Transfer the shrimp to a plate.
To the same wok, add the garlic, ginger, and dried chilies. Switch the heat to low and Stir-fry for about 20 seconds, or until fragrant.
Add the broccoli and stir-fry until it reaches your preferred tenderness. For crisp-tender broccoli, cook for about 2 to 3 minutes. Add a splash of water if needed to help it cook more quickly.
Give the sauce a quick stir to loosen the starch, then pour it into the wok. Stir continuously as it comes to a boil and thickens.
Return the shrimp to the wok and toss everything together until the shrimp and broccoli are evenly coated in the glossy sauce. Serve as is or enjoy with white rice.
Recipe Note
Keto Tip: Omit the sugar and cornstarch. The sauce will be slightly thinner but still full of flavor.
