Easy Pepper Steak Recipe (彩椒炒牛肉)

Whenever I find myself standing in front of the refrigerator wondering, "What should I make for dinner?" this easy pepper steak is almost always the answer.
It's the kind of meal that never lets me down. The ingredients are simple, it comes together in about 15 minutes, and everyone at the table is happy. The combination of tender beef, sweet onions, colorful bell peppers, and savory black pepper sauce somehow never gets old. Even on the busiest days, I know I can make this dish without much thought because it's one of those recipes I've cooked so many times that my hands seem to remember every step.
Ingredients
For the Beef Marinade
- 0.5 pound of beef, recommend using beef chuck, sirloin, or ribeye

1 tbsp of light soy sauce

1 tbsp of Chinese cooking wine

1/4 tsp of baking soda

1.5 tsp of cornstarch

1 tsp of dark soy sauce
For the Stir Fry Sauce

1 tbsp of light soy sauce

1 tbsp of oyster sauce
-
1 tsp of dark soy sauce
- 1 tsp of cornstarch
- 1 tsp of sugar

1 tsp of freshly ground black pepper
- 2 tbsp of water
To Finish the Stir Fry
- 2 multi-color bell peppers, cut into strips
- 1/4 of a large-sized sweet onion, sliced thinly
- 1 tbsp of minced garlic
Directions
Cut the beef into 1/8 of an inch thick slices. Then add light soy sauce, Chinese cooking wine, baking soda, cornstarch, and dark soy sauce and mix thoroughly. Set aside for 10 minutes.
Mean while, put together the stir fry sauce ingredients in a bowl and mix well.
Turn the heat to high and heat the wok until smoking hot. Add oil and swirl it around to create a non-stick layer. Add the beef and sear until the edge is lightly golden.
Push the beef to the side of the wok so you have room to add minced garlic, onion slices, and bell pepper. Cook for 2-4 minutes or to your preferred doneness.
Pour in the stir fry sauce and stir thoroughly. Serve with white rice.
