Easy Spicy Lo Mein

This is a follow up recipe for the Chinese BBQ spice. If you haven't watch it yet, please take a look first, because we gonna use it in this dish. One of my favorite ways to play with thisBBQ spice is applying it on all kinds of store-bought frozen items and pantry essentials. This spicy lo mein is my go-to choice when I am tired and don’t want to cook because it is easy, delicious, and satisfying.
Ingredients
- 110g / 4 oz of dried egg noodles

1.5 tbsp of Chinese BBQ spice
- 1 tbsp of minced garlic
- 1.5 tbsp of diced scallion
- 2 tbsp of cooking oil
- 5-6 Chinese meatballs, optional
- 2 baby bok choy, optional
Directions
Fill a pot with water and add some frozen Chinese meatballs. Your local Asian market may have a lot of varieties, but any of the following options will be good: fish, squid, shrimp, beef, or pork meatballs.
- Turn the heat to high and cook the meatballs as the water boils.
- Meanwhile, wash and cut 2 baby bok choy into bite size pieces. You can also use spinach, lettuce, and cabbage.
- Once the water is boiling, add egg noodles and cook for 3 minutes or follow the instructions on the package. You can use your favorite kind of noodles.
- Meanwhile, add 1.5 tbsp of BBQ spice, 1 tbsp of minced garlic, and 1.5 tbsp of diced scallion into a heat-proof bowl.
- Heat 2 tbsp of oil to smoking hot, pour it onto the aromatics and mix well.
- Take the noodles out of the water, add the baby bok choy to the pot, and let them cook for 20 seconds.
- Mix the noodles with the sauce. Top with the bok choy and meatballs.
