Pork and Chive Potstickers

Potstickers also know as guo tie [锅贴]. It is a type of pan fry dumplings. In this video, you will learn 2 of my secret techniques that will ensure your pot stickers turn out perfect.

  • Oh, these were so good. I followed your technique for making the meat juicy and it worked. Since I was making a meat paste, I blended all of my aromatics in the food processor until they were also almost a paste. I did not have to adjust the seasonings at all. In the end, using one tablespoon of filling, I got 35 dumplings, so the 30 to 40 was spot on. I always have a few potstickers right away and then I freeze the rest for later so I know that these are going to cook from frozen beautifully.
