Scallion Asparagus Recipe (葱油芦笋)

Asparagus is such a wonderful vegetable. It is crunchy, fresh, and nutritious. However, if you don’t cook it right, it tastes kind of plain. This scallion sauce smells wonderful and tastes delicious. If you know anybody who doesn’t like asparagus, make this dish and change their mind.

Ingredients
- 1.5 tbsp oil
- 3 Tbsps diced scallion
- 1 Tbsp minced garlic
- 1 Tbsp oyster sauce
- 1 Tbsp soy sauce
- 2 liters / 8 cups water
- 1 Tbsp cooking oil to blanch the asparagus
- 400g / 14 oz of asparagus
Directions
Use a vegetable peeler to peel the stringy and fibrous skin at the end of each asparagus. Then, cut the asparagus into 2.5-inch long stalks.
- Add oil and diced scallion to a saucepan and stir over medium-low heat for 2 minutes or until the scallion is slightly golden on edge.
- Add minced garlic and keep stirring over medium-low heat until the garlic is slightly golden. Don’t burn it; otherwise, it will bring a bitter taste.
- Turn off the heat. Add soy sauce and oyster sauce and stir well. If you want to make this dish vegan, use vegan oyster sauce.
- Bring a pot of water to a boil over medium heat. Add a drizzle of oil and toss in the asparagus. The oil will help to retain the vivid green color so your dish looks nicer.
- Cook the asparagus for 2 minutes. Take it out of the water and mix it with the scallion sauce. Serve as a side dish.
