This century egg salad (Liang ban pi dan 凉拌皮蛋) is one of the easiest side dishes you can make. There is no cooking involved and no need to turn on the stove. Simply cut the century eggs into wedges and mix with a spicy sauce.

Century Egg Salad: Would You Dare to Try This Chinese Delicacy?

Ingredients

  • 2 century eggs

  • 2 Thai bird's-eye chilies, diced

  • 1.5 tbsp of diced garlic

  • 1.5 tbsp of diced scallion

  • 2 tbsp of diced cilantro

  • 2 tbsp of soy sauce

  • 1/2 tbsp of Chinese black vinegar

  • 1/2 tsp of sugar

  • 1/2 tbsp of water

  • 2-3 tbsp of laoganma chili crisp, or to taste

Directions

  1. Peel the century eggs and cut each one into wedges. Arrange them neatly on a serving plate.

  2. In a small bowl, combine the diced Thai bird’s eye chilies, garlic, scallions, cilantro, soy sauce, Chinese black vinegar, sugar, water, and Lao Gan Ma cili crisp. Mix well until the sugar has dissolved.

  3. Drizzle the sauce generously over the century eggs and serve immediately.
