Easy Chinese Dinner Meal Made in a Rice Cooker (3 Recipes Included)
In this post, I will show you how to whip up a 3-dish Chinese dinner, including Chinese Cured Meat Platter (腊味拼盘), Steamed Pork and Taro in Black Bean Garlic Sauce (豉汁蒸肉), and Steamed Fish in Chopped Fermented Chili Sauce (剁椒蒸鱼). Everything can be done in 30 minutes. Maybe less, because the recipes are super simple, but the heart of this video is to give you the idea of how to arrange the cooking flow to save time so you can put together a lovely meal even on a busy day.

Adding cured meat and sausage is kind of like our Hakka countryside style of cooking. Both the Chinese sausage and cured meat are quite salty, so as the rice heats up, the meat will release part of its flavor into the grains. The salty taste will be balanced, and the rice becomes rich and delicious. I don’t recommend using regular Western sausage as a replacement because they are completely different. Imagine boiled breakfast sausage; it just doesn't taste good.
The marinade I use for the pork is a classic Cantonese black bean garlic sauce (豉汁). You can click here to purchase fermented black beans. This sauce is often used on ribs, beef, and even shellfish. But I don't recommend trying beef and seafood if this is your first time making multi-meal in a rice cooker because they require accurate cooking times to ensure perfect doneness. Pork slices here are much more forgiving.
The fish recipe here is inspired by a classic Hunan dish called Duo Jiao Yu Tou (剁椒鱼头). Duo Jiao is a traditional Chinese fermented chopped chili; it provides a beautiful, distinctive, savory taste. You can click here to purchase it. Yu Tou (鱼头) is fish head; typically, this dish uses the bighead Carp's head (胖头鱼). However, it is almost impossible to find this fish outside China, so I switched to boneless, skinless fish fillet. It tastes just as delicious. If you don't like fish, try shrimp, or even enoki mushrooms.

A rice cooker is essentially a small electric cooking pot that can heat and steam foods. If you own a rice cooker, think beyond it. You can make so many dishes other than white rice.

This dinner includes 3 recipes: Chinese Cured Meat Platter (腊味拼盘), Steamed Pork and Taro in Black Bean Garlic Sauce (豉汁蒸肉), and Steamed Fish in Chopped Fermented Chili Sauce (剁椒蒸鱼). When I made it, my family really devoured it immediately. The cured meat was almost gone before I even finished filming. The pork is extremely flavorful and tender. The taro just melts in your mouth. The fish is soft, fresh, and packed with umami taste. This will be the best rice you will ever make because it absorbs lots of flavors.
Ingredients
For the steamed pork
- 227g / 1/2 lb pork, sliced thinly
- 3 cloves garlic, finely diced
- 1/2 inch ginger, finely diced
- 2 tsp fermented black beans, roughly diced
- 1.5 tbsp hot oil
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 170g / 6 oz taro, cut into thick strips
For the Steamed Fish
- 350g / 12.3 oz fish fillet
- 1/2 tbsp fish sauce
- 1/2 tbsp oyster sauce
- 85g / 1/3 cup Chinese fermented chopped chilies
- 5 cloves garlic, diced
- 1 inch ginger, diced
- 3 tbsp hot oil
For the rice
- 113g / 4 oz Chinese Sichuan sausage
- 113g / 4 oz Chinese cured meat
- 300g / 1.5 cup jasmine rice
- 2 cups of water
- 1/4 of a corn, used as a steamer rack
Directions
To make the black bean garlic marinade, add 1 tbsp of soy sauce, 1 tbsp of oyster sauce, 2 tsp of diced fermented black beans to mixing bowl 1. Pour in 1.5 tbsp of hot oil, and mix well.
Slice the pork into 1/8 of an inch pieces and add to the black bean garlic marinade and mix well.
Cut the taro into thick strips, then place on to a shallow plate. Spread the marinated meat on top in a single layer. Set it aside.
To make the Chinese fermented chopped chili sauce, add 1/2 tbsp of fish sauce, 1/2 tbsp of oyster sauce, and 1/3 cup of Chinese fermented chopped chilies to mixing bowl 2. Pour in 3 tbsp of hot oil and mix well.
Cut the fish fillet into thick slabs then arrange them onto a shallow plate as well. Spoon the fermented chopped chili sauce all over. Set it aside.
Rinse 1.5 cups of rice a couple of times and drain well, then add 2 cups of clean water.
Chop off a chunk of corn and place it in the middle of rice cooker pot. Tuck in 1 Sichuan sausages and 1 slab of Chinese cured pork.
Use a pair of plate grippers to transfer the pork plate into the rice cooker. Put a pair of chopstick on the top and continue to add the fish plate into the rice cooker.
Place the entire set up into the rice cooker. Put on the lid and press the cook button. If you don’t have rice cooker, an instant pot will work just as good.
Once done, Take everything out. Slice the sausage and cured meat, garnish the other 2 with scallions, and serve.
