Sticky Rice Lotus Leaf Wraps

Lo Mai means glutinous rice in Cantonese, and Gai means chicken. This dish is also known as "sticky rice with chicken in lotus leaf wrap." It is a classic breakfast item that you can grab from street vendors while heading to school or work. It is also served as a dim sum dish in tea house restaurants which was one of my favorite places to go on a weekend morning when I lived in China. I will be honest, this is a challenging recipe, but it is so delicious that worth trying.

  • 1. How do I make the glutinous rice in the rice cooker? Do I strain the water that I had soaked and add 2 cups of water to my rice cooker? What setting do I put it on? I have white rice, brown rice, and steam cook settings.

    2. I am allergic to seafood and will not be adding shrimp? Do I add 2 more cups of water to the soaked mushrooms?

    3. I am allergic to Chinese sausages, Can I use chicken sausages instead?

    4. Can I use ground chicken/turkey instead of diced chicken??

    Thanks you.

  • You could substitute the dried shrimp with dried scallops if you. can find a Chinese dry goods/tea shop. They are more pricey but you won’t have to buy many. They’ll go a long way.
